This butternut squash soup is a cinch to make and is perfect for when you want something homemade and fresh without having to put a lot of hours on the stove. If you wanted to take longer, I suppose you could roast the squash first-but having not tried this yet, I’m not sure that it would make a worthwhile difference to this soup, as it all gets pulverized in the end.
