Lime chips enjoy big love in this household, so it seemed only logical to not let a good tortilla go to waste. Also, with kitchen fires low this summer, avocados have been a regular staple of my dinners, so here is my foray into homemade chips (no preservatives required). As accompaniment, insert your guacamole recipe of choice.

This pyramid of green tastes as holy as it looks. Native to the middle eastern region, the name refers to both the thyme leaves and the absurdly addictive spice blend. The first time I had za’atar, (pronounced “zatha”) it came in its toasted version on a fresh thick pita.
